We now have Vacherin in our shop. It is only produced between mid August and March. This cheese is unusual as it uses unpasturised winter milk to form a soft, wonderfully aromatic and velvety cheese. Most cheeses need summer milk to produce this full flavour but Vacherin achieves it with a rich, creamy consistency and crust thats earthy and sappy in aroma. The bark provides texture and perfume.
