Visit to Simon Weaver
The CheeseWorks recently visited local cheese producer, Simon Weaver, Cotswolds Organic Dairy. Simon farms organically, in the beautiful Cotswolds, where he produces his award winning cheeses. Pop in and try some of the delightful organic Cotswold Blue-Veined Brie and organic Cotswold Brie. We received a warm welcome from Simon and the team, we thoroughly enjoyed our tour of the creamery. We have also combined these cheese with others and some of our delicious chutneys and crackers to create a number of lovely cheese gift boxes, for example the British Twist cheese gift box.
Winner of the Best World Whisky, Gold Medal at the 2012 International Whisky Competition, the Madeira finish single malt Welsh whisky defines our 'house style of whiskies'. Distilled in our unique copper pot still, matured in bourbon barrels, finished in rich Madeira wine casks and bottled at premium strength, this single malt whisky is smooth, light in character and softly golden in colour.
At a generous 46% ABV, it has a classic freshness with aromas of cream toffee, rich fruit and raisins. The palate is crisp and finely rounded, with the sweetness to balance an appetising dryness. Notes of tropical fruit, raisins and vanilla persist in the finish.

Whittingtons Brewery was established in early 2003 as part of the Three Choirs estate, which is set in 75 acres of rolling vineyards in the Gloucestershire countryside.
The brewery is named after one of Gloucestershire's most famous sons, Dick Whittington. Legend has it that Dick was born in the hamlet of Pauntley, near to the site of the vineyard, and lived in nearby Gloucester before embarking on his adventurous life in London. Our beer names concentrate on Whittington's cat, Puss, who became as famous as Dick Whittington himself!
Whittingtons is a five-barrel brew plant, which is one of the smaller brewery sizes. A full mash tun method is used to brew their three beers: a 3.6% ABV 'session' ale, a richer 4.2% ABV premium beer and their seasonal pale ale.
Only locally sourced hops are used, with First Gold being the primary hop variety. Malts from traditional English floor maltings are also a vital ingredient at Whittingtons, and their head brewer has selected the Maris Otter variety as the best base for their beers.
The use of these natural ingredients is in keeping with the classic image of Great British Beer, and at Whittingtons they intend uphold the traditional methods of brewing, which give their beers a flavoursome, rich hoppy character.
