Selles sur Cher

A classic goat's cheese from the Loire. The method of ashing and salting the cheese was introduced by the Saracens in 800AD. The cheese is fine textured, succulent and velvety. The smell is of walnuts. The lingering flavour is also nutty, slightly sour and salty with a hint of sweetness

Mrs Kirkham's Lancashire

The finest of the few producers who still produce traditional Lancashire.

A loose, crumbly texture with a unique flavour - rich at first, giving way to pineapple fruitiness and a sharp tang.

Also superb for cooking and melting. Great for Welsh Rarebit!

Pecorino Rosso

One of the beautiful Italian sheep's milk cheeses. The Tuscan ewe, or pecora, enjoy fragrant, green pastures and produce rich milk.

Pecorino Rosso is matured for two to three months and the rind is rubbed with tomato paste and olive oil.

The cheese has a firm, smooth texture and a sweet, full flavour.

Try it with figs and honey.

Banon

A delicate little goats cheese from the Provence.

After two weeks it is washed in eau-de-vie(apple brandy)and then wrapped with chestnut leaves. The creamy result is a fruity, woody flavour.

Delicious in a peppery, rocket salad dressed with nut oil. Goat's/Unpasteurised

Finn

Finn is a soft cheese with a sweet, slightly nutty and mushroomy flavour and a distinctly salty tang. Like the French triple cream cheeses cream is added to the milk before cheese making starts to produce a richer, full flavoured cheese.
