One of the best known cheeses in the world, Gouda is Hollands largest export of cheese.
Old Amsterdam is a gouda which has been matured for 18 months. It comes coated in black wax. The paste is a deep yellow colour with a waxy texture. Moist and firm with a full nutty flavour.

A delicate little goats cheese from the Provence.
After two weeks it is washed in eau-de-vie(apple brandy)and then wrapped with chestnut leaves. The creamy result is a fruity, woody flavour.
Delicious in a peppery, rocket salad dressed with nut oil. Goat's/Unpasteurised

A traditional, cloth-bound cheddar from Somerset. It has a spicy aroma with rich, grassy flavours and a long lasting tang.

In a real smoking room it is smoked on beechwood to give the typical colour from dark brown to orange.

One of the oldest cheeses in the UK, Appleby's Cheshire has a beautiful golden/orange colour and light, crumbly texture. A rich, mellow, savoury taste - a must for the cheeseboard and great for that ploughman's lunch on a warm sunny day! Cow's/Unpasteurised/Vegetarian

One of the beautiful Italian sheep's milk cheeses. The Tuscan ewe, or pecora, enjoy fragrant, green pastures and produce rich milk.
Pecorino Rosso is matured for two to three months and the rind is rubbed with tomato paste and olive oil.
The cheese has a firm, smooth texture and a sweet, full flavour.
Try it with figs and honey.
